1 Tablespoon olive oil
2 Tablespoons butter
1 Tablespoon finely mince garlic
3 Tablespoons all-purpose flour
2 cups low-sodium/fat free chicken broth
1 Lemon, zest and juice
1 teaspoon Italian Herb Seasoning Mix (I use McCormick)
salt and back Pepper,
to taste
Put olive oil and butter in a medium saucepan. Melt butter and
add the garlic. Saute for 1 minute, then whisk in the flour forming a roux.
Gradually add in the chicken broth, whisking as you are
pouring so as not to form lumps.
Next, add in the lemon zest and juice and Italian seasoning
blend. Bring to a boil then allow to simmer for 5 minutes until slightly
thickened. Season with salt and pepper.
Pour over baked or grilled chicken or seafood. Top with thin lemon slices.
