Cheesy Chicken and Rice in Crockpot


I found this recipe on Your Barefoot Neighbor who credited someone for the recipe.  I don't care who created it, but it is a wonderfully easy and delicious dinner.  

Ingredients:

1 ½ -2 pounds of chicken (breasts, thighs, or tenders)
1 box (6.9 ounces) yellow rice mix (such as Zatarain's)
1 can cream of chicken soup
1 can whole kernel corn (drained)
1 diced onion
½ diced bell pepper
1 cup shredded sharp cheddar cheese
1 stick of butter
Seasonings: salt, pepper, garlic powder, onion powder, and paprika

 

Spray the crockpot. Season the bottom of your slow cooker with salt, pepper, garlic powder, onion powder, and paprika, then place the chicken breasts down.

In a separate mixing bowl, combine the drained corn, diced onion, bell pepper, dry yellow rice mix, cream of chicken soup, and shredded cheddar cheese.

Spread the rice and soup mixture evenly over the top of the chicken in the crockpot.

Slice the butter into pats and place on top of the mixture. Making sure to put butter over the entire top.

Cover and cook on your preferred slow-cooker setting until the chicken is tender and the rice is fully cooked through. (Usually 6-8 hours on low or 3-4 hours on high).
