1 (15 oz.) can pumpkin (about 2 cups)
1 (14 oz.) can Eagle Brand® Sweetened Condensed
Milk
2 large eggs
1 tsp. vanilla
1 tsp. ground cinnamon
1/2 tsp. ground ginger
1/2 tsp. ground nutmeg
1/2 tsp. salt
1 (9-inch) unbaked pie crust, deep dish
HEAT oven to 425 degrees F. Lightly beat the two
eggs in a large mixing bowl. Add pumpkin, sweetened condensed milk, spices,
vanilla and salt and whisk until smooth.
Pour into crust.
Bake pie for 15 minutes. Reduce temperature to 350 degrees and
continue baking for 35-40 minutes. Pie
is ready when a butter knife inserted in the middle comes out clean.
Allow pie to cool for at least 40 minutes. Garnish with whipped topping, if desired. Serve.
Cover and refrigerate any leftover pie.
