My husband makes amazing beef enchiladas from scratch, but I prefer the easy way. My philsophy is keep it simple. Try these and tell me if you like them
3-4 cups of cooked chicken, shredded (I use a rotisserie chicken)
3 Tablespoons of Taco Seasoning
1/2 cup of sour cream
1 10-ounce can of Rotel tomatoes and green chilis (I use mild but you do you), drained
1 tsp. pepper
1 tsp. garlic powder
1 tsp. smoky paprika
2 10 ounce cans of enchilada sauce
3 cups shredded Fiesta blend/ Mexican blend cheese
10 medium burrito size flour tortilla wraps
Preheat oven to 350 degrees. In a large mixing bowel, add chicken, taco seasoning, sour cream, Rotel, pepper, garlic, paprika, and 1 cup of cheese. Mix well.
Spray a 9x13 baking dish and then pour 1/3 of one can of enchilada sauce in the bottom of the pan. Tilt the pan up and down until the sauce coats the entire bottom.
Spoon about 1/4 of a cup of the meat mixture in the center of tortilla, fold on side of wrap over the filling and tuck it under, tightly, and then roll the rest of the wrap around. Place the folded side down in the pan. Pour the remaining enchilada sauce over them and then top with 1 1/2 to 2 cups of cheese. Put foil on top of the pan and bake 25 minutes. Remove the foil and bake 5-8 minutes until the cheese is bubbly.
Garnish with cilantro or parsley. Enjoy
